When I clean my grill, it still looks dark.
During the initial and subsequent firings the stainless steel will change colors. This is perfectly normal and adds unique markings and color to each grill.

Should I clean my grill before use? What should I use or not use?
Yes, it is highly recommended to clean all of the cooking surfaces (griddles) before you use it for cooking. Use dishwashing liquid and warm water with a sponge. All components are also dishwasher safe. Never use any bleach products or steel wool! This will damage your grill and eventually promote rust. Using various cleaning chemicals may also be hazardous to your health. Use cooking spray or oil to coat your griddles to prevent sticking. Treat your cooking surfaces like a high quality stainless skillet.

How long until I can start cooking?
Usually about one hour after you have started to burn your wood or charcoal. This will give you more even temperature across the entire grill. You should have plenty of hot coals to navigate to the cooking areas of choice. The longer you wait while feeding the fire and spreading the coals, the more consistent and controllable your cooking surface will be.
Using charcoal briquettes will speed up the wait time before cooking. Usually it takes about 30 minutes for a good coal bed.

What can I use for fuel on my grill?
Only good dry hardwoods and/or charcoal should be used. Never use pressure treated wood or wood of unknown nature. Lump charcoal and briquettes can also be used. Never use accelerants such as lighter fluid or gas.

Seems like my griddles are not entirely laying flat?
Again, perfectly normal for things to (“rack”) warp a bit due to the intense heat. The stainless steel is just reacting and should return to a relaxed state when cooled. This can be somewhat avoided by slowly raising the temperature.

Where can I use my grill?
Always use your grill outdoors away from any combustible materials and away from any structures. Never use the grill in a car port, garage, or on a deck! Never use the grill during high or gusty winds. Always use on flat and stable ground. Depending on your fuel source, the fire may crackle and pop embers out of the log box, so be mindful of your surroundings. Never leave the grill unattended.

What are the notches for at the top?
They are used to evenly space and position the kabob skewers.

What is the ember mover and poker for?
The grill requires near constant attention. As the red hot coals drop from the log box you will need to move/position the coals where you need to get the desired cooking temperature. The poker allows you to move coals and wood. It is also designed to break up larger coal chunks so they can drop between the log box tubes.

What should I do when I am finished cooking?
Your grill will continue to be hot for several hours after cooking. Allow to cool to the touch. We do not recommend using water to cool the fire. Doing so can cause severe warping. Once the fire has cooled, scrape the ashes and debris into a metal pan or bucket. If using plastic, be sure to check that all the ash and coals have cooled. Clean with warm water and dishwashing detergent as mentioned above. Again, all parts are dishwasher safe. It is now ready for future use.

Should I cover my grill?
Your grill is completely made of 304 Stainless Steel and will not rust if cleaned and cared for properly. It does not need to be covered. However, a cover will keep the grill clean and free of environmental pollutants and debris.

What safety tips should I follow?
Always use heat safe gloves when the grill is in use. We also recommend using a heat safe apron (such as leather) as the fire can throw off intense heat. Always have a fire extinguisher or garden hose nearby. Keep children away even after cooking as the grill will remain very hot for several hours. Never leave your grill unattended once you start lighting your grill. After you are finished cooking, be sure all flames have subsided. We recommend saving some ash, which can be used to suffocate the remaining hot coals to cool the fire. Do not leave the fire unattended until the hot coals have stabilized and cooled.
The fire box griddle should only be used after you have established your hot coals and embers. Using it during the wood burning and high flames will result in a cooking surface too hot to cook on. The extreme heat may result in the griddle temporarily warping heavily.
